3 egg whites
1/8 tsp cream of tartar
1/2 tsp vanilla extract
2/3 cup white sugar
1 TBS unsweetened cocoa powder
1/3 cup semisweet chocolate chips
Recipe
Preheat oven to 300 degrees.
Combine egg whites, cream of tartar, and vanilla. Beat until the whites form soft peaks. Slowly add sugar; beat until stiff peaks form, and mixture becomes glossy. Fold in cocoa and chocolate chips. Drop mixture by teaspoonfuls on a greased cookie sheet. Bake for 25 to 30 minutes.
There was a note that if you double this, don't double the chocolate chips (why is that? I've heard it in more than one recipe) Also, you can make plain meringue by leaving out the cocoa and chocolate chips. I'm thinking that it would also be good with some of that flavored instant coffee powder added.
