Cream Cheese Sugar Cookie

These are a softer cutout sugar cookie.
List of Ingredients
1 cup white sugar
1 cup butter or margarine, softened
1 (3 ounce) package cream cheese, softened
1/2 teaspoon salt
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
1 egg yolk, reserve white
2-1/4 cups all-purpose flourRecipe
In a large bowl combine sugar, butter, cream cheese, salt, almond and vanilla extracts and egg yolk. Blend well. Stir in flour and mix until well blended. Chill dough overnight. (Note: The dough will be too sticky if not well chilled.)
Preheat oven to 375°.
On lightly floured surface roll out one-third of the dough to 1/8-inch thickness; refrigerate remaining dough until ready to use. Cut into desired shapes with lightly-floured cookie cutters. Place 1-inch apart on ungreased cookie sheets. Leave cookies plain for frosting or brush with slightly beaten egg white and sprinkle with candy sprinkles or colored sugar.
Bake at 375° for 7 to 10 minutes or until light and golden brown. Cool cookies completely before frosting.
(makes 5-6 dozen)
(Laurel Note: The idea of using cream cheese in a sugar cookie appeals to me because I like a softer cookie, but I think this might be a little difficult to work with.)
