Cucumber Cookies

For all you ladies with an abundance of cukes and carrots from the garden, here is a recipe that will help use them up. I received it from Peak Market.
List of Ingredients
175 ml softened margarine (3/4 cup)
175 ml sugar (3/4 cup)
1 egg
5 ml vanilla (1 tsp)
500 ml all-purpose flour (2 cups)
10 ml baking powder (2 tsp)
2 ml baking soda (1/2 tsp)
10 ml cinnamon (2 tsp)
1 ml nutmeg (1/4 tsp)
250 ml cucumber, unpeeled & grated (1 cup)
250 ml carrots, shredded (1 cup)
175 ml raisins (3/4 cup)
Recipe
In a large bowl; beat together margarine and sugar. Add egg and beat until well blended. Stir in vanilla. Sift flour, baking powder, baking soda, cinnamon and nutmeg into batter; mix thoroughly. Stir in cucumber, carrots and raisins.
Drop by teaspoonfuls onto ungreased baking sheet. Bake in preheated 375°F (190°C) for 15 to 17 minutes or until delicate golden brown.
Makes 68 cookies.
