Nice light apple cake with firm, delicious struesel base. Very good. I called an Inn that was featured in Bon Appetit to request a recipe and sent them this one in return. They wrote me a nice note and told me they had served them for dinner that night.
2 cups all-purpose flour
½ tsp salt
2 cups firmly packed brown sugar
1 cup sour cream
½ cup butter or margarine
1 tsp vanilla
1 cup chopped walnuts or pecans
1 egg
2 tsp cinnamon
3 to 4 apples, peeled, cored and chopped (2 cups)
1 tsp soda

Preheat to 350*.
In large mixer bowl, combine flour, brown sugar and margarine. Beat at low speed till fine crumbs form. Stir in nuts. Press 2 ¾ cups of mixture into ungreased 13x9" pan.
To remaining crumb mixture, add cinnamon, soda, salt, sour cream, vanilla and egg. Blend well. Stir in chopped apple. Spoon batter evenly over crumb base in baking pan. Bake for 30 to 40 minutes or until wooden pick inserted comes out clean.
