Hungarian Shortbread

4 cups flour
2 tsp baking powder
1/2 tsp salt
4 sticks REAL butter, softened
yolks of 4 large eggs
2 cups sugar
1 cup jam or preserves (I used strawberry- any will work fine)

Whisk the flour, baking powder and salt together and set aside.
Beat the butter on high speed until light. Add egg yolks and sugar; continue to beat until pale and fluffy.
Reduce speed to low and add dry ingredients; beat only long enough to completely incorporate.
Turn dough onto work surface and cut in half- wrap each ball of dough in plastic wrap and freeze for 30 minutes or until firm.
Preheat oven to 350 degrees. Remove dough from freezer and grate it on the large holes of a box grater, directly into a lightly greased 13x9" pan. Make sure it gets into the corners, but don't press hard. Spread the jam over this. Then grate the other half of the dough on top of the jam. Don't press the dough hard- just pat it into place.
Bake for 35 minutes, or until golden. Dust heavily with confectioner's sugar as soon as it comes out of the oven. Cool completely before cutting.
*NOTE* I used the food processor instead of the grater- I started with the grater and said to heck with this- and threw it into the processor! Worked perfectly- the bars could not have been more delicious!
