Peanut Butter Cookies from Mrs. Liston
Source of Recipe

Recipe Introduction
From an old family friend - I'm reading it from the card in her shaky handwriting; she's been gone many years now. There was a store where we lived that you could go and grind the peanuts yourself, and that's what she used to do if she could, so that makes REALLY peanutty cookies, but commercial peanut butter is okay too . . .

1 cup granulated sugar
1 cup brown sugar
1 cup shortening
2 eggs
1 tbsp. vanilla extract
1 cup peanut butter - either smooth or chunky
1 tsp. soda
1 tsp. baking powder
2 cups flour
Recipe
(The only instructions she wrote on the card are to put it in the freezer part of the fridge, but extrapolating from there . . . )
Cream together sugars and shortening, add eggs & vanilla and beat until fluffy. Add peanut butter & blend well.
Sift together dry ingredients and add to mixture, blending well. Chill dough for at least two hours, then shape into medium-size balls and flatten them with a fork on a greased cookie sheet. (Dough will be too soft to work with unless it's chilled)
Bake 12-15 minutes at 350F.
