    Spinach - Feta-stuffed Meatloaf

    List of Ingredients




    2 pounds ground beef
    2 large eggs
    2/3 cup seasoned bread crumbs
    1 package onion soup mix, dry
    2 cloves garlic, minced
    1/4 cup Parmesan cheese, grated
    1/2 cup ketchup
    3/4 cup feta cheese, crumbled
    3 tablespoons sun-dried tomatoes, minced
    10 ounces frozen chopped spinach, thawed and squeezed dry

    Recipe



    1. Reserve 2 tablespoons of ketchup. In large bowl, combine ground beef, eggs, bread crumbs, onion soup mix, garlic, Parmesan cheese, and remaining ketchup.

    2. In a small bow, mix together the feta cheese and sun-dried tomatoes.

    3. On a cutting board covered with wax paper, pat tthe meat mixture into a retangle approximatley 6" x 10".

    4. Spread the feta mixture over the meat rectangle to within 1-inch of edges. Place spinach over the feta.

    5. Using the wax paper, roll the meatloaf so that the meat completely covers the cheese and spinach center. Make sure that the ends of the meat loaf are also completely sealed.

    6. Place loaf in slow cooker, on one end, if necessary. Top with remaining ketchup.

    7. Cover; cook on Low 8 to 10 hours (or on High for 4 to 6 hours).
