    1 Pie Crust

    Filling:

    8 Oz Cream Cheese -- Softened
    1/3 C Sugar
    2 Tbsp Amaretto
    2 Eggs
    Topping
    2 Tbsp Peach Preserves
    1 Tbsp Amaretto
    1 16 Oz Pkg Frozen Peach Slices Without Syrup -Thawed And Drained

    Recipe



    Heat oven to 450°
    Generously prick pie crust with fork. Bake for 9-11 minutes or until light golden brown. Cool 30 minutes.

    Reduce oven to 375°

    In medium bowl, combine cream cheese and sugar; beat until light and fluffy. Add 2 tablespoons amaretto and eggs; blend well. Pour into cooled crust.

    Bake at 375° for 18-22 minutes or until filling is set. Cool 10 minutes. Refrigerate at least 1 1/2 hours or until completely cool.

    Just before serving, in medium bowl, combine peach preserves and 1 tablespoon amaretto; mix well. Can strain if desired at this point. Add peaches; stir to coat. Arrange peach slices over top of pie. Store in refrigerator.
    Serving Size : 10

    NOTES : To prevent excessive burning around the edge, place a strip of foil around the edge of the pie crust the last 15 minutes of baking.
