Stir in cocoa. Remove from heat & set aside. Toss bread & 3/4 c coconut together n put in greased 1 & 1/2 qt baking dish. Add sugar, eggs, vanilla & salt to milk mixture & mix well. Pour over bread. Sprinkle with the remaining coconut Place baking dish in a 12x9x2~inch pan in oven; add 1~inch water to pan. Bake at 350 for 40 to 50 minutes, until knife inserted in center comes out clean.
