    1 cup water (or milk)
    1/3 cup unsalted butter
    1 cup flour
    1/8 tsp. salt
    1 tbsp. sugar
    4 or 5 eggs; be absolutely sure they're at room temperature

    Recipe



    Combine water (or milk) and butter; bring to boiling. Sift together flour, salt and sugar; add to boiling mixture all at once and stir quickly with a wooden spoon. When paste becomes smooth, stir more rapidly until it becomes "dry" and will not cling to either the spoon or the side of the pan - stop stirring immediately once this occurs, and remove from heat (paste will not puff if overstirred or overcooked). Add eggs one at a time, beating vigorously after each addition. Absolutely do NOT return to heat. Paste is ready after last egg is incorporated and a small quantity of paste will stand upright if scooped up on the tip of the spoon.

    Allowing space for expansion, place by spoonfuls on a greased baking sheet, or use a pastry bag if you wish. Before baking, lightly sprinkle a few drops of water over them. Bake in pre-heated 400° oven for about 25 minutes.

    Cool and fill with filling of choice.
