Foolproof Aussie Pavlova (Meringue)

With an electric mixer,beat 6 egg whites well till soft peaks form. Slowly add 2 cups castor sugar (regular is ok)and a pinch of cream of tartar. Gently fold in 1 Tblsp cornflour (cornstarch), 2 teasp brown malt vinegar and 1 teasp vanilla.
Pile mixture in a circle onto a baking tray lined with baking paper. Bake in preheated oven 140C/280F for 5 minutes. Then reduce heat and bake at 120C/250F for 55 minutes. Allow to cool in the turned off, open oven for 15 minutes while it settles.
Decorate with whipped cream and strawberries.
Variation: Add 1 teasp peppermint essence as well. Top with crushed peppermint crisp chocolate bars.
