    1 cup graham cracker crumbs
    2 tablespoons unflavored gelatin
    1/4 cup orange juice
    2 8-ounce packages cream cheese, room temperature
    3/4 cup sugar
    1/3 cup heavy cream
    zest of one orange (grate only the orange of the peel)
    1 teaspoon vanilla
    2 cups whipped topping

    Using a muffin tin made for 8 full-size muffins, line each muffin cup with plastic wrap. Press 2 tablespoons of graham cracker crumbs into the bottom of each muffin cup, and set the tin aside.
    Warm the orange juice and add the gelatin. Stir until completely dissolved. Set aside, keeping bowl in a warm water bath. (This mixture needs to be kept warm so it doesn't begin to gel.)
    In a mixing bowl, blend the cream cheese and sugar together. Pour in the heavy cream and slowly mix until blended. Add the orange zest and vanilla; mix until blended.
    (Note: For best consistency, it's important to do the following steps in order.)
    Spoon 1/4 cup of the cheese mixture into the dissolved gelatin and blend.
    Pour the gelatin mixture into the bowl of cheese mixture and blend thoroughly.
    Spoon 1/2 cup of whipped topping into the cream cheese mixture and blend thoroughly.
    Using a rubber spatula, fold the remaining whipped topping into the cream cheese mixture. Spoon the mixture into the lined muffin tins and refrigerate until firm (about 2 hours).
    Pull on the plastic wrap to unmould.
