    ORANGE TAPIOCA DESSERT

    3 cups water
    2/3 cup quick-cooking tapioca

    1 cup sugar

    ½ teaspoon salt

    2 cups fresh orange juice

    2 tablespoons grated orange rind

    1 cup whipped cream

    Recipe



    Place water in top of double boiler and bring to boil over direct heat. Combine tapioca, sugar and salt. Add gradually to water and bring to boil, stirring constantly. Place over hot water and cook 5 minutes. Remove from heat. Mixture will thicken and clear as it cools. When slightly cool, add orange juice and grated rind.

    Chill; add whipped cream, blending well. Turn into scalloped orange cups and chill until ready to serve.
