    Make sure to chill the dessert for a couple of hours before serving.

    List of Ingredients




    1 box angel food cake mix

    1 small box sugar free orange jello
    3/4 cup boiling water
    1/2 cup cold water
    1 small box sugar free vanilla instant pudding
    1 1/2 cups milk
    1 8 oz. container Lite Cool Whip
    1/2 cup toasted sliced almonds

    Bake cake as package directs (I used 2 9" loaf pans) and let cool. Slice into 2" slices and line an ungreased 13x9" pan with them.

    In a medium bowl, place jello and boiling water; stir to dissolve, then add the cold water.

    Poke holes all over the cake slices with a meat fork. Pour the jello over this. It's o.k. if a lot stays on top of the cake pieces.

    Whisk the pudding and milk for 2 minutes. Stir in the orange extract. Let stand for 2 minutes to thicken. Fold in the whipped topping. Spread this over the cake slices, and top with the sliced almonds. Scatter mandarin oranges over the top, if desired.

    15 servings.

    About 180 calories per serving.


    This would be good with cherry jello and chocolate pudding, too.
