    Ozark Pudding

    Recipe Introduction

This recipe was given to my mother about 45 years ago by a sweet old lady from Arkansas...it's not a pudding in the sense we Yankees know it, but is more of an apple-cake type dessert. I guess sort of a cross between apple pie and bread pudding, if you can imagine that! Anyway, it's delightful!

    List of Ingredients

    2 eggs
    1 1/3 cups sugar
    1 cup flour
    1 tsp. salt
    2 tsp. baking powder
    2 tsp. vanilla
    2 cups sliced apples
    3/4 cup coarsely chopped walnuts

    Recipe

Preheat oven to 350 degrees. Generously grease a 9x13 baking pan.

Beat eggs til light. Gradually add sugar; beat well. Add flour, salt and baking powder, mix well. Add vanilla, apples and walnuts; mix well.

Spread in pan. Remember, this is not cake batter. It will be thick, and you will have to spread it.

Bake at 350 for 35-40 minutes, 'til it smells so good you jes' can't stand it!
