Rice Pudding

List of Ingredients
2 quarts whole milk
1 cup raw rice
1½ cups sugar
1/4 tsp. salt
2 eggs
1 tbsp. vanilla extract
handful raisins (optional)
sprinkling of ground cinnamon
Recipe
Place milk, rice and sugar in pot. Bring to a boil and simmer until rice is completely cooked (about 20 to 25 minutes).
Beat eggs by hand til blended, take a little milk/rice mixture from pot and add to eggs (this tempers the eggs), pour the egg mixture slowly back into pot and stir constantly until the eggs are incorporated into the milk. Add vanilla and raisins. Continue simmering til pudding starts to thicken, or place in top of double boiler to continue cooking. If it gets too thick add a little more milk. Turn into serving bowl, sprinkle with cinnamon and allow to cool, then refrigerate.
