Sour Cream Apple or Peach Pie

List of Ingredients
2 slightly beaten eggs
1 8~oz container dairy sour cream
1 C sugar
3 T all-purpose Flour
½ tsp ground cinnamon
1/8 tsp ground nutmeg
3 C thinly sliced, peeled apples (or peaches)
1 Single~Crust Pie
1/3 C all-purpose Flour
1/3 C packed brown sugar
2 T butter of margarine
Recipe
In a lrg mixing bowl stir together eggs & sour cream. Stir in sugar, the 3 T flour, cinnamon, nutmeg, and ¼ tsp salt. Add apples (or fresh or frozen peaches) then gently toss till fruit is coated.
(If using frozen peaches, let stand about 45 min’s or til peaches are partially thawed but still icy)
Prepare & roll out Pastry & Line a 9~inch pie plate w/pastry. Trim & crimp edge of pastry. Transfer fruit mixture to pastry~lined pie plate. To prevent overbrowning, cover edge of pie w/foil. Bake at 375° 15 min’s.
Meanwhile, in a small mixing bowl stir together the 1/3 C flour & brown sugar. Cut in the butter (or margarine) til crumbly. Remove foil from pie. Sprinkle brown sugar mixture on top of pie. Bake for 25~30 min’s more for fresh fruit (about 40 min’s more frozen) or til pie appears NEARLY set in the center when gently shaken. Cool the pie on a wire rack. Store in the refrigerator. Makes 8 servings.
