    1- 1 lb container fresh strawberries
    1/4 cup sugar
    1/2 cup skim milk
    3 drops red food coloring, optional
    1 small pkg. sf vanilla instant pudding
    2 cups Light Cool Whip
    1 reduced-Fat frozen pound cake (Kroger has them)

    Set aside three whole strawberries, and mash the rest. Add the sugar and let stand for about 10 minutes.

    Add the milk and food coloring, and mix well (I used my mixer with the whisk attachment on it.) Sprinkle the dry pudding over the top and mix well. Fold in the Cool Whip.

    Split the pound cake horizontally into two layers. Place the bottom layer on a serving plate and spread with a generous amount of the strawberry mixture. Put the top on and spread the rest of the mixture on the top and sides. Garnish with the reserved strawberries on top. Refrigerate until serving time.

    10 servings, 3 points each.
