5 c fresh strawberries
3/4 c sugar
2 T all-purpose flour
1 t grated lemon rind
1 T fresh lemon juice
1 t vanilla extract
Cooking Spray
Topping:
1 c all-purpose flour
1/2 t baking powder
1/2 t baking soda
1/2 c plain non-fat yogurt
2 T fresh lemon juice
2 T margarine, melted
1 t vanilla extract
2 egg whites
Recipe
Combine first six ingredients in bowl; stir gently. Spoon strawberry mixture into 11x7x2-inch baking dish coated with cooking spray; set aside.
Combine flour, baking powder, and soda in a bowl; stir well.
Combine yogurt and remaining ingredients; add to dry ingredients, mixing until moistened.
Drop dough by spoonfuls onto strawberry mixture. Bake at 400 about 25-30 minutes, or until nicely browned.
