Beat cream cheese, sugar and vanilla til smooth, about 30 seconds. With a spoon, stir in the whipped topping. 2. Spoon half of the cheese mixture into a glass casserole dish. Lay half the cookies over mixture. Spoon half of the pie filling on next. 3. Repeat layers: cream cheese mixture, cookies and pie filling. Cover with a plastic wrap and refrigerate 3 to 4 hours or overnight. Serves 8-10.
