    3/4 cup granulated sugar
    3 tablespoons all-purpose flour
    dash of salt
    4 eggs, separate three of them
    2 cups milk
    1/2 teaspoon vanilla extract
    vanilla wafers
    5-6 medium size fully ripe bananas, sliced

    Recipe



    Preheat oven to 425F.

    Combine 1/2 cup of the sugar with flour and salt. Mix in 1 whole egg and 3 egg yolks. Add the milk and mix well. Cook over low heat, stirring constantly, until thickened. Remove from heat and stir in vanilla.

    Spread a small amount over the bottom of a 1 1/2 quart dish and follow with a layer of vanilla wafers and a layer of bananas. Pour about 1/3 of the pudding over this. Continue layering the ingredients to make 3 layers of each, ending with pudding. Whip the three egg whites until stiff but not dry, adding the remaining 1/4 cup of sugar and whipping until it forms stiff peaks. Spread this over the pudding, covering it completely and sealing it around the edges. Bake 5 minutes or until lightly browned. Serve warm or cold.

    8 servings.
