Very Best-Ever Cheesecake

REAL New York Cheesecake - I promise you, if you have cheesecake lovers in your family, you will never try another cheesecake recipe after you serve this! This is my most-requested recipe, bar none. One thing you must do- be sure to make it a day ahead so it can chill overnight!
List of Ingredients
1 1/2 cups flour
1/3 cup sugar
1 egg, beaten
1/2 cup butter or stick margarine
2 1/2 pounds cream cheese (5 - 8-oz. pkg), softened
1 3/4 cups sugar
3 tablespoons flour
5 eggs
2 egg yolks
1/4 cup heavy whipping cream (unwhipped) Recipe
Preheat oven to 400 degrees. Lightly spray a 10 inch springform pan with Pam.
To make crust: combine 1 1/2 cups flour, 1/3 cup sugar, 1 egg and 1/2 cup butter. Spread to the edges of the pan. Prick all over with a fork, then bake 15 minutes at 400 degrees. Cool slightly.
Increase oven temp. to 450.
For filling: combine all remaining ingredients and beat very well, except for the cream; then add the cream and beat slowly only to blend. Pour filling over crust and bake 10 minutes at 450 degrees; reduce temp. to 200 and continue to bake one hour. Turn oven off, but leave in oven for another hour to cool. Don't worry if the center looks slightly jiggly at first. Cover with foil and chill in refrigerator overnight. Remove from pan before serving.
*tip* to prevent any cracking on top, place a cake pan with water in it in the bottom of the oven while the cake is baking.
This is great topped with a can of cherry pie filling!
