Italian Frittata

Clean fresh asparagus spears and discard tough ends.
Cut asparagus in rounds about 1/4 inch thick.
Pour 3 tablespoons oil in small teflon frying pan. Fry asparagus until brown and crispy.
Beat 4 eggs, add salt and pepper and pour over asparagus. Lift edges and allow egg to run underneath to let all the eggs cook.
When the eggs are set, take a dish and cover frying pan and invert, slide egg fritatta back into pan and cook until egg is done.
