    Baked Cod on bed of Spinach

    List of Ingredients

    2 lbs. cod fish
    2 lbs. chopped spinach
    1-1/2 cups dairy butter, melted & divided
    1/4 cup lemon juice
    1/4 cup dry white wine
    salt/pepper to taste
    natural unblanched almond meal for 'crumb' topping
    1/2 cup sliced scallions for garnish
    lemon wedges or twists of lemon for garnish

    Recipe

    Preheat oven to 400F (200C)

    Place 1/2 cup melted butter in baking dish. Taking each piece of fish, turn it over & around in the butter to coat. Season lightly; bake for about ten minutes.

    While the fish is baking, combine lemon juice, wine & 1/2 cup butter, heat to boiling, lower heat a bit and reduce the sauce by about half or a little more.

    Using remaining 1/2 cup butter, saute the spinach slightly; do not overcook.

    After ten minutes, remove fish from oven; pour the sauce evenly over fish and bake ten more minutes, or until it's opaque & flakes with a fork.

    Place buttered spinach on a large platter; arrange fish pieces on spinach & sprinkle with almond meal. Collect whatever sauce remains in the baking pan; pour over all. Scatter sliced scallions over all and garnish with lemon twists or wedges.
