3 orange roughy filets
salt as needed
fresh ground pepper as needed
3 tbsp. dry white wine
3 tbsp. olive oil
1/2 cup cracker crumbs
2 cloves minced garlic
1 tsp. lemon peel
1 tbsp. parsley flakes

Season filets with salt & pepper and place in shallow baking dish. Pour wine and olive oil around filets and bake at 400° about 12 minutes or until just done. Do not overcook.
While fish bakes, toast crumbs in a small skillet over low heat, stirring constantly, until light brown - about 4-5 minutes. Add garlic, lemon peel, parsley & olive oil; cook a minute or two longer, still stirring constantly.
Transfer fish to serving plates, sprinkle with bread crumbs and spoon pan juices around. Garnish with lemon wedges & fresh parsley sprigs, if desired.
