    Border Marinated Shrimp

    List of Ingredients




    32 large shrimp, peeled and deveined (about 1½ pounds)

    MARINADE:
    1/3 cup tequila
    2 tablespoons olive oil
    2 tablespoons lime juice
    4 cloves garlic, minced
    1 whole jalapeno pepper, minced
    1 teaspoon ground cumin or coriander
    1/2 teaspoon coarsely ground pepper

    Recipe



    Place prepared shrimp in a large sealable plastic bag. Whisk together all marinade ingredients.
    Pour marinade over shrimp and seal bag. Toss to distribute marinade. Refrigerate for 30-45 minutes.

    Grill shrimp over direct high heat for 2-4 minutes, turning once. Remove when shrimp are just opaque and firm to the touch. Serve with lime wedges as an appetizer.

    Note: Shrimp can be grilled on skewers with accompanying chunks of sweet peppers, cherry tomatoes and onion.
