    Poached Salmon from Carol

    I like to poach, by simering about 1 cup wine or beer with chopped scallions, add salmon steaks and enough water to partially cover. Simmer this way with a piece of buttered foil the size of your skillet (buttered side down) covering fish for about 10 minutes. Very light and delicious!!!
