    1/2 cup skim or 1% milk
    1 teaspoon hot pepper sauce
    3/4 cup yellow cornmeal
    1 tablespoon Old Bay or Cajun seasoning
    1/4 teaspoon salt
    1 1/2 pounds catfish fillets (4 fillets)
    Lemon wedges, optional

    Heat oven to 400. Spray a baking sheet with nonstick cooking spray. (Quick clean method -- line baking sheet with aluminum foil and spray foil. When done, peel off foil and throw away; put baking sheet away)

    Mix milk and hot pepper sauce in a deep plate (mixture will look curdled). Mix cornmeal, seasoning and salt on another plate. Dip each fillet in milk mixture then in cornmeal mixture to coat both sides. Transfer to sprayed baking sheet.

    Bake 10 minutes; turn fillets over with a broad spatula, and bake 10 minutes longer or until fish is opaque in center when flaked with fork. Serve with lemon wedges.
