List of Ingredients
2 new potatoes, thinly sliced
1/2 tablespoon butter or margarine
1 carrots, thinly sliced
1/2 small onion, sliced
1/2 zucchini, sliced
2 4 oz. fresh white fish fillets, (I use cod loin)
1/2 teaspoon dried dill weed
Recipe
Place potatoes in small saucepan; add enough water to cover. Bring to a boil over medium-high heat. Boil 2 to 3 minutes or until almost tender; drain.
Meanwhile, melt butter in large skillet over medium-high heat. Add carrots; cook 1 minute. Add onion and zucchini; cook 2 to 3 minutes or until vegetables are crisp-tender.
Cut two 12-inch-long pieces of parchment paper. Divide potatoes and vegetables onto center of each piece; top with fish fillets and dill; Wrap each package securely with double fold seals. Refrigerate; use within 3 days.
For each package: Microwave on a microwave-safe plate on HIGH for 4 to 6 minutes or until fish flakes easily with fork. Servings: 2
Note: Foil can be substituted for the parchment paper in this recipe. Since foil cannot be used in a microwave, place the Express Packages on a 15x10x1 baking pan and bake them in a 425 degree oven for 20 to 25 minutes.
