    My family enjoys fresh fish so tonight we are having fresh book trout over arugula.

    I spread the greens on the plates and dress with lemon and olive oil. Then I let the kids take a vegetable peeler and peel long shards of parmesan cheese onto each plate.

    Then in a skillet, I melt butter- meanwhile I place lemon and olive oil and salt inside the trout.

    Then I add the trout to the pan and saute briefly, then add white wine and braise for about 5 minutes total on each side. The liquid is bubbling and it cooks the fish perfectly.

    I place a trout onto each prepared plate over the greens and cheese.

    I usually serve this with small potatoes, in butter and fresh rosemary. Maybe some zucchini to round off the menu
