    List of Ingredients




    Marinade for the fish:
    1 1/2 cups of garlic minced
    1/2 cup shallots chopped
    1/2 cup olive oil
    1/2 cup kosher salt
    3 T pepper

    Tomato Rouille:
    1 t garlic
    1 t shallots
    1 cup fresh tomatoes chopped
    2 leaves fresh basil
    salt and pepper to taste

    Recipe



    Fish:
    Mix contents in a bowl. Rub both sides of steak and let marinate for at least 4 hrs or overnight.

    Grill swordfish for 3 to 4 minutes on each side. Top with tomato rouille.

    Tomato Rouille:
    In a heated pan place 3 T olive oil. After oil is hot add garlic and shallots. Slightly brown them, then add the tomatoes. When the tomatoes are softened add basil, salt & pepper. Spoon over grilled swordfish.
