    Hush Puppies - Lighter than Air

    List of Ingredients




    1 c. self-rising cornmeal
    1/2 c. self-rising flour
    1 medium onion, chopped fine
    1 tsp. catsup
    2 oz. beer
    1 egg
    salt and pepper (liberal)
    buttermilk (less than 1 cup)

    Recipe



    Stir together above ingredients, adding enough buttermilk to make a thick batter. Refrigerate for 30 minutes. Heat 1/2 to 1 inch of oil in iron skillet. Spoon batter into hot oil. Fry until lightly browned. Place hush puppies in a warm styrofoam ice bucket to keep warm. Serve hot.

    If you don't happen to have beer on hand or if you are a teetotaler, then you may leave out the beer (hush puppies won't be as light) or you may use 1/2 envelope of yeast, dissolved in about 1/4 cup of warm water, instead of the beer.
