    Pan-Seared Scallops & Potatoes

    List of Ingredients

    2 T olive oil, divided in half
    1/2 lb. potatoes, cut into 1/4" dice
    1/2 lb. bay scallops
    1 clove garlic, peeled and minced
    1 T lemon juice
    1 T chopped fresh Italian parsley
    1/8 t salt
    1/8 t ground black pepper

    Recipe

    Heat half the olive oil in a large saute' pan over medium-high heat. Add potatoes and stir to coat. Fry potatoes, stirring frequently, for 10 minutes until golden brown. Remove with a slotted spoon and set aside.
    Add remaining oil to pan and reduce heat to medium. Add scallops and cook, stirring frequently for 3 minutes.

    (Ginny's note: At this point, the scallops released alot of liquid and since the recipe says 'Pan-Seared' I didn't think this was a good thing. lol So I put my colander in a large bowl, dumped the scallops in to drain, returned the scallops to the pan and added a little reserved liquid as needed.) Add garlic and continue cooking for 1 more minute.

    Add reserved potatoes, lemon juice, and parsley; stir to heat thoroughly. Season with salt and pepper and serve immediately.
