Poached Salmon

Heat about a tablespoon of butter in a non-stick skillet until it foams. Toss in 1/4 tsp. each of cumin and chili powder. Saute briefly until spices are fragrant.
Add the fish and cook about 2-3 minutes more. Add 1/4 cup of lemon juice and 1/4 cup of water, cover and continue to cook over low heat for about 3-4 minutes more.
This is good over rice and if you want to get adventurous, top it off with papaya salsa. I've also paired it with couscous and a tossed oil-and-vinegar salad.
