1 1/4 lbs. cod filets
1/4 c. lemon juice
1 t. salt
Bay leaf
2 slices onion
2 peppercorns
drawn butter (see below)
Recipe
In large skillet, bring 1½ in. water to boil.
Gently lower filets into water, arranging in a single layer. Add remaining ingredients. Cover and simmer until fish flakes easily, about 3 to 5 min.
Remove fish to heated platter. Garnish with lemon slices and serve with drawn butter.
Drawn Butter:
Melt 1 c. butter, skimming froth off top. Pour clear butter (top) into serving dish. Discard milky sediment remaining on bottom.
