Rum-Glazed Spicy Shrimp

1 1/4 Lbs Large Shrimp
3 Tbsp Light Rum -- Divided
2 Tbsps Fresh Lemon Juice
1 Tbsp Oil
2 Cloves Garlic -- Minced
Dash Red Pepper Flakes -- Or More if needed
Dash Salt
2 Tbsp Firmly Packed Brown Sugar
2 Tsp Cider Vinegar
Recipe
Peel shrimp, leaving tails intact. Place in bowl with half the rum, lemon juice, oil, garlic, red pepper flakes and salt; toss to coat, Cover, and marinate shrimp 30 to 60 minutes in refrigerator. In small bowl, combine brown sugar, vinegar and remaining rum. Thread shrimp on skewers and lightly brush shrimp with marinade. Grill turning once basting until shrimp turns pink. Serving Size : 4
