    List of Ingredients




    1/2 cup Captain Crunch cereal, finely crushed
    1/4 cup butter-flavored crackers, finely crushed (about 8 Keebler Club Crackers)
    1/4 cup pistachio nuts, finely chopped
    Nonstick cooking spray (I used the butter flavored spray, but I bet the garlic would be
    good in this situation too)
    1 pound salmon fillet, cut into strips

    Recipe



    1. Preheat oven to 350. Coat a rimmed baking sheet with nonstick cooking spray. (I
    lined my baking sheet with foil, then sprayed the foil.)

    2. In a shallow dish, combine the first three ingredients; mix well. (I used my chopper
    attachment for my handblender -- put the cereal and nuts in whole and lightly crushed
    the crackers, then whirled for a few seconds.)

    3. Lightly coat the salmon strips with nonstick cooking spray then dip in cereal mixture,
    coating completely. Place on baking sheet and lightly coat with cooking spray.

    4. Bake for 10 to 12 minutes or until fish flakes easily with fork.
