    Sauteed Shrimp and Pineapple

    List of Ingredients




    1 pound peeled and deviened shrimp
    1/2 tsp salt
    pepper to taste
    1 tablespoon veg. oil
    3 garlic cloves, minced
    1 tablespoon grated fresh ginger, or 1 tsp ground ginger
    2 cups peeled and cut up fresh pineapple
    1 large red bell pepper, sliced
    3 scallipons, cut into 3-inch pieces
    2 tsp lime juice

    Recipe



    Sprinkle the shrimp with 1/4 tsp salt and the pepper. Heat 1 tsp oil in skillet and sautee shrimp for about a minute and a half on each side; remove from pan and set aside.

    Heat the remaining oil and sautee the garlic and ginger just until fragrant, about 30 seconds. Add the pineapple and cook and stir about 2 minutes; add the red bell pepper slices and cook and stir another 3-4 minutes. Add the shrimp, scallions, lime juice and the remaining salt and some pepper. Cook about 2 more minutes, until heated through. One cup=3 points.

    Serve with rice, (1/2 cup for 2 points)
