2 x 175g(6oz)white fish fillets, fresh or defrosted
10mI (2 teaspoons) lemon juice
salt and pepper
50g (2oz) button mushrooms, wiped and sliced
3 spring onions, washed, trimmed and chopped
90ml (6 tablespoons) ready made sweet and sour sauce
Recipe
Cut 2 large squares of foil and lay a fish fillet on each square. Sprinkle with lemon juice and season lightly with salt and pepper.
Place the mushrooms, onions and sauce in a small saucepan and heat gently for 2-3 minutes. Spoon the mixture over the fish fillets, seal the foil to make a packet, leave room for heat circulation.
Place the packet on a preheated hot covered grill and cook for about 10 minutes, depending on thickness.
