    1/2 C Fresh Chopped Cilantro Or Parsley
    2/3 C Vegetable Oil
    4 Tsp Grated Lime Rind
    1/2 C Fresh Lime Juice
    2 Tbsp Ginger Root -- Minced
    2 Tbsp Minced Garlic
    2 Tsp Basil
    1 Tsp Cumin
    1/2 Tsp Kosher Salt
    1/2 Tsp Crushed Red Pepper Flakes
    4 4-6 Oz Tuna Steaks
    1 Lb Large Shrimp -- Deveined W/ Tails On

    Recipe



    In a small bowl, combine marinade ingredients. Rinse tuna; pat dry with paper towels. Pour marinade over fish, turning to coat. Refrigerate, covered, 30 min.

    Prepare grill. Spray grill rack with no stick cooking spray. Using direct heat cooking method, arrange fish on grill rack 4-5" over medium-hot coals. Grill, uncovered, until slightly opaque in center (about 10 min. per inch of thickness measured at its thickest part), turning once. Garnish with cilantro sprigs.

    Serves 4

    Shrimp Variation: Substitute "16 to 20 count" deveined, uncooked shrimp for tuna. Thread shrimp on 4 (9") skewers that have been soaked in water for 30 min. Grill until shrimp are opaque (5-7 min.)
