    Nantucket Cranberry Relish

    Source of Recipe

    Laureljean~Sara Leah Chase's Cold-Weather Cooking

    List of Ingredients

    1-1/2 pounds fresh cranberries
    1 lime
    1 tangerine
3/4 cup (packed) light brown sugar
    3/4 cup granulated sugar
    3 tablespoons orange liqueur
    Scant pinch ground cloves
1/4 cup pine nuts, lightly toasted

    Recipe

Place the cranberries in a food processor and process just until the cranberries are coarsely chopped. Transfer to a mixing bowl.

Cut the lime and tangerine (peel and all) into 1/2-inch pieces. Remove any tangerine seeds and place the fruits in the food processor. Process until the fruit is finely chopped. Add the cranberries.

Add the sugars, orange liqueur, and cloves to the cranberries and stir well to combine. Taste for sweetness and adjust if it seems too tart. Fold in the pine nuts and let the flavors of the relish mellow overnight in the refrigerator. This relish will keep for several weeks stored in the refrigerator.

    Makes about 6 cups.
