Recipe Introduction
This is really different and refreshing. The original recipe calls for fresh parsley, but I substituted mint and was very happy with the results.
List of Ingredients
6 oranges, peeled (the original recipe calls for these to be cut into round slices, but I supreme them so there's no pith)
1 small onion, julienned (the sweeter the better; I used a Vidalia)
2 tablespoons extra-virgin olive oil
2 tablespoons fresh mint, chopped
salt and freshly ground black pepper
Recipe
Place the orange supremes in the bowl. Add the mint, julienned onion, and extra-virgin olive oil. Season with salt and pepper and toss. Set aside for 10 minutes before serving. Serves 4
