2 pounds green beans -- fresh
1 teaspoon red pepper flakes
4 cloves garlic
4 heads fresh dill
2 cups water
1/4 cup pickling salt
2 cups vinegar, cider
Recipe
Wash and stem beans but leave whole; pack beans uniformly into 4 sterilized hot pint jars. To each pint, add 1/4 teaspoon red pepper, 1 clove garlic and 1 head dill. Combine water, salt and vinegar in a saucepan. Bring to a rolling boil, pour over beans, filling to within 1/4 inch of jar top. Wipe jar rim, adjust lids. Process in boiling wate rbath 5 minutes. Start to count processing time when water in canner returns to full boil. Remove from water and let cool. Makes 4 pints.
