    5 cups diced fresh rhubarb
    3 cups sugar
    1 3-ounce package strawberry gelatin

    Recipe



    Combine rhubarb & sugar in a stainless steel pan, cover and let stand overnight.

    Add 1/4 cup water to mixture, bring to boiling, reduce heat and simmer for 12 minutes. Remove from heat and stir in gelatin until completely dissolved.

    Pour into containers with tight-fitting lids. Store in refrigerator or divide in small portions and freeze.
