10 cups zucchini -- ground
4 cups onion -- ground
5 tablespoons salt
2 1/4 cups vinegar
6 cups sugar
1 tablespoon nutmeg
1 tablespoon dry mustard
1 tablespoon turmeric
1 tablespoon cornstarch
2 tablespoons celery seed
1/2 teaspoon pepper
1 whole red bell pepper -- chopped fine
1 whole green bell pepper -- chopped fine
Recipe
Combine zucchini, onion and salt, let stand overnight, then drain and rinse in cold water. Add remaining ingredients, mix well and bring to a boil. Simmer 30 minutes, then ladle into hot pint jars and seal. Process in boiling water bath for 15 minutes. Start to count processing time when water returns to full boil. Makes about 7 pints.
