    Asparagus Chicken

    adapted from a recipe from cmkath/EDC, 9/10/1999

    List of Ingredients

    6 pieces of boneless chicken, dark meat preferred but BSCB are okay
    5 tbsp. butter
    1/2 tsp. salt
    1 cup chicken broth
    1 cup heavy cream
    1/2 tsp. tabasco sauce or to taste
    1 pound fresh asparagus, cleaned & coarsely chopped
    1/2 to 3/4 cup fresh grated parmesan

    Recipe

    Brown the chicken in butter, remove from skillet. Add salt, broth, cream & tabasco to drippings; heat & reduce until slightly thickened.

    Place asparagus in the bottom of a 9x13" casserole. Arrange chicken on top of the asparagus. Pour sauce over the chicken and asparagus. Sprinkle with parmesan & bake at 350° for 45 minutes.
