    Beef Tenderloin w/ Stilton Portobello Sauce

    List of Ingredients

    8 6oz Beef Tenderloin Steaks
    1 Tbsp Chopped Fresh Thyme
    3/4 Tsp Fresh Ground Black Pepper
    1/2 C Butter -- divided
    12 Ozs Portobello Mushroom Caps -- sliced
    1/2 C Dry Red Wine
    3/4 C Sour Cream
    4 1/2 Ozs Stilton Blue Cheese

    Recipe

    Rub steaks evenly with thyme and pepper.
    Melt 1/4 cup butter in a lg skillet over med-high heat. Add steaks and cook about 5 min per side.

    Remove and keep warm.

    Melt remaining butter in pan, add mushrooms, saute 4 mins or til tender. Add wine and cook 1 to 2 minutes while scraping the bottom with your spoon.
    Stir in sour cream and 1/4 cup cheese until melted. Drizzle sauce over fillets; sprinkle with remaining cheese.

    NOTES : Can use beef broth for the red wine.
