    Brie Chicken

    List of Ingredients

    2 cloves garlic, crushed
    2 T. olive oil
    3 T. balsamic vinegar
    1/4 t. seasoned salt
    ground black pepper
    2 boneless, skinless chicken breasts
    brie slices, rind removed
    1 small chopped tomato
    2 scallions, sliced


    Recipe

    Place the garlic, oil, vinegar, seasoned salt and a few grinds of black pepper in a glass baking dish. Blend the ingredients together well. Drop in the chicken breasts, turn them over to saturate on both sides with the marinade, cover and refrigerate for at least a half hour. Longer is better.

    When it's time to cook dinner, unwrap the chicken and broil, on both sides, for 5-6 minutes. Place some of the sliced brie on each chicken breast and top that with some of the chopped tomato and scallions. Place back under the broiler just until the cheese melts.

    Serve with some brown rice and asparagus spears. (Omit the rice if on low carb)

    HINTS:Any flavored vinegar will work in this recipe.

    Serves 2.
