Cold Marinated Shrimp (Low Carb)

List of Ingredients
2 Lbs Shrimp -- Peeled And Deveined
1 Lemon -- Thinly Sliced
1 Sm Red Onion -- Sliced Very Thin
1 Plum Tomatoes, Diced
1/4 C Lemon Juice
1/4 C White Wine Vinegar
1/4 C Olive Oil
2 Cloves Garlic -- Minced
1 Tsp Dry Mustard
Dash Salt
1/8 Tsp Ground Red Pepper
Recipe
Cook shrimp in lightly salted boiling water in a large saucepan for 1 to 3 minutes or until shrimp are opaque. Drain.Place shrimp in a large baggie and set a deep bowl. Add lemon slices, onion rings and tomato; toss.
Combine lemon juice vinegar, olive oil, garlic, mustard, salt and red pepper in a small bowl. Whisk to mix. Pour over shrimp. Close and refrigerate 2 to 6 hours. Makes 10 servings. Serve in a decorative bowl.
