Broccoli Cheddar Bake

List of Ingredients
4 cups chopped broccoli, fresh or frozen
1/2 cup chopped onion
1 1/2 cups egg substitute
1 cup skim milk
1 cup reduced-fat shredded cheddar
salt and pepper to tasteRecipe
Preheat oven to 350 degrees. In a skillet, saute onion and broccoli in cooking spray until tender (add water if too dry; let steam.) Drain and set aside. In a bowl, combine egg substitute, milk and 3/4 cup cheese; mix well. Stir in the broccoli and onion. add salt and pepper. Spray a 1 1/2 quart baking pan with nonstick spray; pour the mixture into dish. Place dish inside a larger dish that is filled about halfway with water; bake 45 minutes or until knife inserted in center comes out clean.
